MANILA, Philippines — Hollywood actress Gwyneth Paltrow has given the Filipino breakfast staple tortang talong her own twist, topping the eggplant-and-egg dish with garlicky turkey crumbles and serving it with banana ketchup from scratch.
In an Instagram Reel, Paltrow showed herself preparing the familiar Filipino dish, from handling the roasted eggplant to adding the toppings that set her version apart from the traditional recipe.
The finished dish featured a golden egg base topped with browned turkey crumbles and fresh green herbs, offering a meatier variation of the Filipino home-cooked favorite.
Tortang talong is commonly eaten for breakfast or lunch in the Philippines, often paired with steamed rice. It is traditionally prepared by grilling or roasting eggplant until its skin is charred, peeling away the skin and flattening the flesh before dipping it in beaten egg and frying it until golden brown.
Some households add ground pork or other ingredients to the egg mixture, while others keep the preparation simple, allowing the smoky flavor of the eggplant to take center stage. Banana ketchup, meanwhile, is a familiar accompaniment that adds a sweet and tangy contrast to the savory dish.
The actress’s cooking video drew reactions from Filipino personalities and social media users, including food content creator Erwan Heussaff, who praised her for using the dish’s Filipino name.
“Thank you for not calling it an Eggplant Omelette :)” Heussaff commented on the post.
Known for her acting career and lifestyle brand Goop, Paltrow has also shared cooking and wellness-related content with her followers.
